graphic professionals that cannot afford saturated colors on their desktop
why is that?

Alex, when saturated colors (especially complementary) are placed in close proximity to each other a phenomenon called 'simultaneous contrast' (chromostereopsis) may occur because of retina's chromatic adaptation. The result is a distorted perception of colors, something graphic pros cannot afford.

For instance, if you're color correcting an image while using a bright orange desktop wallpaper (Mac UI paradigm discourages apps to hog screen real estate so you see pieces of the desktop at all times, almost) you'll tend to see your image with a blue cast — which doesn't exist for real. Compensating for your distorted perception will tint the "color-corrected" image with an orange cast.

Pro video/graphics facilities have strict requirements for using saturated colors — walls and table surfaces should be neutral gray with a matte surface and free from glare.
